German Potato Pancakes aka Kartoffelpuffer A Traditional German Recipe ~ however; LOTS OF VARIATIONS of potatoes from all over the world (esp; south america) can add some 'latin' flavours to the mixture too !!! 2 or 3 potatoes will make enough for 4 people !!! 1 onion 3/4 tsp of sea salt 1 tsp of crushed garlic SOME PEOPLE like to add herbs like: rosemary or sage or ? whatever you like ground black pepper ground nutmeg 1 egg 1/4 cup of peanut oil / or bacon lard for frying (this is why you keep your bacon drippings in that covered tin in the fridge) some people like to dip into 'greek vanilla yogut' or 'sour cream' or applesauces or using fruit dips; jams or jellie etc. Wash your potatoes well, and, then, peel them, and, then you can grate the potatoes into a bowl After you have grated the pototoes, it is important to drain them (the more moisture, the less crunch) (some people set them on cheesecloth; or a paper towel) Add your sea salt, black pepper, nutmeg, and egg. Mix them well Grate the onion over the potatoes mixture Heat the oil in the large frying pan (cast iron) is what i use Drop about 1/2 cup of the potato mixture into the hot peanut oil and then flatten it with the back of the flipper . Fry mixture for approx 3 to 5 minutes on each side, or until golden brown. Drain onto a paper towel to remove some of the oils you fried in; and then serve hot with your meal/or, this as a treat

Anyone else’s German parent/grandparent/self make these? Potato “pancakes” made from mashed potatoes, onions, egg, a little flour and fried in a mixture of oil and butter (or bacon fat and butter). I think of my grandmother every time I make them. I threw in cubed leftover Thanksgiving turkey, for fun, and to make it go away because I am so over turkey right now..... Heidi Andrews
Diane Lavender 's POTATOE CAKES Potato cakes. They all started with left over potatoes, an egg or two and chopped onion. Anything else added, depended on what left overs were in the refrigerator. Sometimes no add-ins, other times crumbled bacon, diced meat or ham. I make them for my grandchildren now.
Ann Boehnke My german grandma ( and german mother) made them with grated potatoes, undrained, add in an egg for each grated potato, salt. Spoon them in a pan heated with bacon fat and fry till golden brown on both sides. Eat by themselves or with applesauce or grape jelly. YUM!! A DELICIOUS childhood memory.
Heidi Andrews it's not even a recipe, really. It's made from whatever's left of the mashed potatoes. I used about 3 cups mashed potatoes, 2 eggs, 1/2 cup flour, 1/4 cup diced sweet onion, two or three sliced green onions, salt and pepper. Mixed that all together, then formed patties. I heated a couple tablespoons of olive oil and a couple tablespoons of butter in a frying pan and dropped the patties into the oil. Fried them on a medium heat until crispy on one side, flipped them over and did the same for the other side. I'm sure there's a real recipe somewhere on the internet. Just google "mashed potato pancakes" and I'm sure you'll find something!
