    Grandma Viola Mae Handy's Oatmeal Cookies Recipe

    13 Ingredients (in order of useage)

    1--1 cup shortening
    2--1 cup brown sugar
    3--1 cup sugar in the raw (or, white sugar)
    4--2 eggs well beaten
    5--1 Tablespoon pure vanilla extract
    6--1 1/2 cup white flour
    7--1 tsp sea salt
    8--1 tsp baking soda (without alum)
    9--1 Tablespoon cinnamon
    10--1 Tablespoon of water
    11--3 cups old fashioned rolled oats (we use Quaker Quick or Old Fashioned. Do NOT use instant.)
    12--3/4 cup chopped walnuts or peacans (use 1/2 cup if using raisins or chocolate chips)
    13--1 cup raisins (optional) or 1 cup of chocolate chips (Hersey's 50% plus cacoa chips)

    Method

    1, 2, 3 Cream shortening and sugars,
    4,5 add eggs and vanilla and beat well.

    6,7,8,9 Sift flour, salt, baking soda and cinnamon. Add to first mixture and mix well.

    10 Add a tablespoon of water.
    11, 12, 13 Add oatmeal, Walnuts or Pecans, Raisins or Chocolate Chips (use a good quality chip)
    Add raisins (if using) and nuts. Add oats last.

    3 Spoon out by heaping tablespoonfuls on to greased cookie sheets.
    Bake at 350°F. Bake for 10 minutes. Remove to wire rack. Cool completely.

    Yield: Makes about 2 dozen cookies (big cookies)
