    Norwegian flatbread (FLATBRØD)
Similar to a crispy cracker. Easy to make. Recipe is…
1 1/3 cups whole wheat flour
1 1/3 cups all purpose flour
    1 tsp baking soda
    1/2 tsp salt
    1/4 cup vegetable oil
    3/4 cup buttermilk (room temperature)
    Preheat up oven to 350.
In mixing bowl sift together flours, bs and salt. Add oil and mix well. Add buttermilk (if flour mixture seems dry add an extra tablespoon or so of buttermilk). Knead dough for a minute or so on a well floured surface.
Cover dough with a damp cloth when not using.
Take approx 1/4 of the dough, roll into a ball, and then proceeed to roll it out with a rolling pin on a floured counter top. I like my flatbread wafer thin, so roll out as thin as you possibly can. Place rolled out dough onto cookie sheet (shape of dough doesn’t matter). Bake for 10-12 minutes or until flatbread is slightly browned around the edges and crisp. Once cooled break into serving size pieces; serve with butter or use as a cracker for a dipping side in soups or stews.
